The "Top Secret" Ramen Egg Recipe

A marinated egg to ramen, is like the cherry on top of a sundae, adding that final touch of both aesthetic, but most importantly flavour! Marinated eggs are one of the most common and beloved ramen toppings - and for good reason. Our recipe focuses on nailing that perfect yolk, which, when combined with our mouthwatering marinade, you might forget about your bowl of ramen altogether.

Oh, and by the way, this has always been a closely guarded secret here at Crafty - but we pried this recipe from a locked safe in Chef Jared's kitchen! Shhh.. don't tell him. 

There are a few Crafty touches we put into this recipe, that ensure you get the perfect egg every time. 

1. Use LARGE EGGS Only! 

Cooking time will vary for other egg sizes, such as medium or XL. Using the same size egg every time helps achieve that perfect yolk!

2. Bring Eggs to Room Temperature Before Cooking!

Again, consistency is king. If you bring your eggs to room temperature by taking them out of the fridge ~30 minutes before cooking them, you guarantee you're going to get them all to the same finishing temperature. 

3. Cook Your Marinade!

Gently simmering your marinade for a few minutes is going to enhance the flavours and bring a nice depth to the finished product.

4. Ice Ice Baby!

It might seem laborious, but preparing an ice bath to dunk the eggs in as soon as their finished cooking is perhaps the most important step in achieving the perfect yolk. The ice cold water immediately halts the cooking process, which can otherwise carry on inside the egg as it gradually cools down. 

5. PRO TIP!

At our Noodle Shops, we poke a small hole in the bottom of each egg with something small and sharp (like a thumb tack). This allows gas to escape while the eggs cook, creating a perfect egg shape within the shell.

"Top Secret" Egg Recipe

Makes: 4-6 eggs

  • Prep time: 10 minutes
  • Cooking time: 10 minutes
  • Marinating time: 14-24 hours
  • Total time: 14.25 - 24.25 hours

Ingredients

  • 1 cup soy sauce
  • 1 cup water
  • 1/4 cup rice vinegar
  • 30g sugar
  • 1 tbsp ginger, minced
  • 1 clove garlic, minced

Instructions

  1. Take eggs out of the fridge and bring to room temperature.
  2. Mix all marinade ingredients in saucepan and bring to a simmer. Simmer gently for 5 minutes, stirring frequently.
  3. Strain the mixture into a small mixing bowl and let it cool to room temperature.
  4. Fill a large pot with water and bring to a rolling boil.
  5. Meanwhile, prepare an ice bath in a large mixing bowl.
  6. Once water is at a rolling boil, cook eggs for exactly 6 mins and 30 seconds, maintaining a rolling boil the entire time.
  7. After 6 mins and 30 seconds, remove the eggs from boiling water and immediately plunge into the prepared ice bath.
  8. Once the eggs are completely chilled, gently peel their shells.
  9. Place the eggs in marinade, ensuring eggs are fully submerged, cover, and refrigerate for at least 14 hours and up to 24 hours.
