Ramenara: A Crafty Twist On A Classic Dish

When it comes to comfort food, two dishes reign supreme—creamy, dreamy carbonara and savory, slurp-worthy ramen. So, what happens when these culinary worlds collide? Meet Ramenara, a bold fusion dish that swaps out traditional pasta noodles and uses Crafty Ramen’s handmade ramen noodles for a Japanese spin on the Italian classic.

Nonnas look away! We're introducing a dish that’s equal parts indulgent and crafty. It's rich, it's creamy and it’s got the kind of bite that’ll make you question if you need a fork to twirl it or chopsticks to slurp it! Let's dive into a bowl of Ramenara, where your favourite pasta dish gets a ramen remix! 

INGREDIENTS (serves 2) 

Crafty Ramen 4-Pack Noodles (use 2 bundles) 
100g pancetta diced *can use guanciale or bacon if preferred 
1/4 cup butter 
2 cloves garlic, minced 
4 large egg yolks (keep two aside for garnish) 
1/4 cup Chicken bone broth *can also use some reserved noodle water
1/2 cup freshly grated Parmesan (extra for garnish) 
Freshly ground black pepper (lots of it!)
Salt, to taste

DIRECTIONS: 

The secret here is to move fast! You want to cook everything rather quickly so you don't end up with scrambled eggs! 

  1. Heat a small amount of oil in a large pan and add the pancetta. Cook until crispy and browned.
  2. Add garlic and saute for a few minutes until fragrant. 
  3. Turn heat down slightly and add butter.
  4. Add chicken broth (or reserved pasta water).
  5. Bring a pot of water to a boil and add 2 bundles of noodles. Cook for 60 seconds or until desired doneness. *Reserve a small amount of the noodle water if you are not using broth. 
  6. While the noodles are boiling, turn the sauce off the heat.
  7. Add 2 egg yolks and mix.
  8. Add parmesan cheese and noodles and mix well.
  9. Add lots of ground pepper (or to your liking). 
  10. Add salt to taste if needed (the parmesan is salty already, so a little goes a long way here)! 
  11. Add more broth or noodle water if sauce seems too dry or noodles need some loosening. 
  12. Mix well and divide noodles into two bowls or plates. 
  13. Top each serving with an egg yolk (mix this in as you enjoy)! 
  14. Sprinkle more parmesan and black pepper to garnish.
