For a long time, the freezer aisle has gotten a bad wrap. 

It was where you'd go for a quick dinner, a last-minute meal, or something to keep on hand "just in case." Convenient? Absolutely. But if you were after the best quality, you probably headed for fresh ingredients to cook at home. 

Fast forward to today, and things look a little different. The freezer aisle is now filled with premium seafood, artisan pastries, frozen fruit picked at peak ripeness, and chef-inspired meals like our very own frozen ramen. What was once considered the backup option has now become a first choice for many shoppers.

Today, modern freezing technology has come a long way. Here's where things get a little science-y…

When food freezes, tiny ice crystals form inside it. If freezing happens slowly, those crystals become larger and can damage the structure of the food. That's what often leads to vegetables turning soft or proteins losing their texture after cooking. Modern flash freezing works differently.

By freezing food very quickly, much smaller ice crystals form, helping preserve the texture, quality and flavour of the ingredients once it’s cooked.

It's one of those behind-the-scenes innovations most of us never think about, but it has completely changed what's possible in the frozen aisle. Instead of being about convenience alone, freezing has become one of the best ways to lock in freshness.

Ramen Is Part of That Evolution

Ramen has evolved alongside the freezer aisle. 

For years, making ramen at home usually meant reaching for a shelf-stable pack of instant noodles. It's quick, affordable, and let's be honest, it’s saved many late-night cravings! 

But freezing opened the door to something different. 

Instead of drying ingredients to make them shelf stable, they can be prepared fresh and frozen while they're still at their best. That means fresh noodles can stay springy, real broth can be frozen instead of powdered, and proteins and vegetables can be enjoyed much closer to the way they were originally cooked.

It's not about replacing instant ramen, it's simply another way to enjoy a quality bowl of ramen at home.
