Hiyashi Chuka Yuzu Ramen with Grilled Shrimp

A refreshing and vibrant dish that's perfect for the end of summer or whenever you are looking for a delicious noodle salad, or alternative to a hot bowl of ramen! This Chilled Hiyashi Chuka Yuzu Ramen with grilled prawns is just the dish! Inspired by the classic Japanese cold noodle salad, this version features Crafty Ramen Noodles tossed with succulent prawns, crisp vegetables, and a zesty yuzu dressing that adds a delightful citrus twist. Garnished with fresh arugula, cherry tomatoes, green onions and cucumber, it’s a burst of flavour in every bite. Make it your own at home with your favourite toppings, or whatever you might have on hand! 

Hiyashi Chuka Yuzu Shrimp Recipe 

INGREDIENTS 
Crafty Ramen 4-pack noodles
3 x Tiger Prawns 
1/2 cup cherry tomatoes (halved) 
1/2 Green Onions (thinly sliced) 
Arugula (handful) 
1/2 cup Edamame beans 
1/2 cup Cucumber (thinly sliced) 

For the Dressing: 
1/3 cup yuzu juice
1/3 cup soy sauce
1/3 cup rice vinegar
2 tablespoon sugar 

DIRECTIONS

Prep Your Toppings: 
  • Slice cherry tomatoes in half (or to your preference) 
  • Thinly slice your green onions and cucumbers (or to your preference) 
  • Remove edamame from shells (if needed) 
  • Leave Tiger Prawns in shell for grilling 
Grill Your Shrimp:
  • Grill shrimp with shells on to lock in flavour (pro tip: once grilled put them in the dressing to cool, this will flavour the shrimp and the dressing)
  • Once cooled, peel and set aside
Prepare Your Dressing 
  • In a small bowl, whisk together yuzu juice, soy sauce, rice vinegar, and sugar to taste 
Cook Noodles: 
  • Bring a pot of water to a roiling boil 
  • Add noodles and cook for 60-90 seconds
  • Drain and set into an ice bath to stop the cooking process and to help cool them down
Build Your Bowl: 
  • In a large bowl, add the cooled noodles and toss in dressing, mix well 
  • Add cherry tomatoes, green onions and cucumbers on top 
  • Lay grilled prawns on top of vegetables 
  • Garnish with a handful of arugula
