Shoyu vs. Miso: What's In the Bowl?

Have you ever been to a ramen restaurant, staring at a menu full of words you’ve never heard before, wondering what the heck is the difference between shoyu and miso? It’s okay, we’ve all been there! To enter the world of professional noodleheads it takes a few crash courses to learn the differences between key ramen terms, including learning the different flavours! What’s the big difference?

Miso and shoyu ramen both start at the same source, coming from fermented soybeans but are processed in two different ways.

Miso ramen, although it comes from the same place, tastes wildly different from shoyu ramen as it embraces the earthy flavor in the fermented soybeans. Miso is thicker than shoyu and gives itself a hearty, creamy feel to the bowl as fermented soybean paste is added to the broth. Miso ramen is a staple of Hokkaido, complimenting the cold weather with its hot, comforting taste, and pairing best with the earthy vegetables of Japan like bok choy (chinese broccoli) and green onions, or a nice little spicy kick!

Shoyu comes from the deep roots of Tokyo, one of Japan’s busiest cities, reflecting the rich history and flavour of the bowl. Shoyu, the Japanese word for soy sauce, uses a similar fermenting process as miso, but watered down, turning it into soy sauce and making the broth more liquidy. It’s mixed into the broth to give it a savory and salty flavor. This bowl was one of the first served in ramen restaurants back in 1910, earning its spot in the ramen world as an OG. Nowadays, shoyu ramen is usually enjoyed with various proteins and veggies, most notably chashu (braised pork belly), menma (bamboo shoots), and seaweed embracing the rich, salty taste.
